The Ultimate Chicilade


Ingredients:

  • 4 x Big tablespoons of The Aussie Smoker’s Signature Rub

  • 8 x Skinless and Boneless Chicken Thighs (Breast can work too)

  • A few dollops of Greek yogurt

  • 2 x Pinches of Salt

  • 1 x tablespoon of Honey

  • Squirt to taste of Lemon Juice.

  • A Handful of Mint Leaves

METHOD:

  1. Prep at least 6hrs before cooking, overnight is best.

  2. Mix the Signature Rub, yoghurt, honey and salt in a bowl.

  3. Add the chicken thighs to the wet mixture.

  4. Massage your meat gently until all smothered well.

  5. Cover with cling film and put in the fridge for at least 6hrs.

  6. Time to cook. Preheat Oven to 180c.

  7. Place marinated chicken thighs into a baking tray without crowding and put in the oven uncovered.

  8. Turn chicken over after 15mins and return to the oven for another 15mins or until cooked through.

  9. Remove from oven and cover with foil to rest for 10mins.

  10. Garnish with a good squirt of lemon juice, a little drizzle of honey, and chopped mint.
