Honey Mustard Vegan Nachos


Featuring yellow goo! This yellow goo can be used as a vegan cheese spread however this is by no means meant to taste like real melted cheese. Enjoy it for the sauciness that it is.

Yellow Goo Ingredients:

  • 1 large Carrot

  • 2 Medium Potatoes

  • 60ml of a light flavoured oil eg Sunflower (something not overpowering)

  • 1-2 tablespoons of Rice/Oat Milk unsweetened

  • 1 tablespoon of Nutritional Yeast

  • 1 teaspoon of Garlic Powder

  • 2 teaspoons of Arrowroot/tapioca/cornflour (this is your thickening agent)

  • A couple of good pinches of Sea Salt

  • Pinch of Pepper

  • A little squirt of Lemon

NACHOS INGREDIENTS:

  • Your favourite corn chips.

  • Your favourite salsa.

Method:

  1. Preheat the oven to 180c

  2. Boil the carrots and potatoes together until really soft.

  3. Drain and keep the liquid and place carrots and potatoes in a blender.

  4. Add all the remaining ingredients and blend until smooth.

  5. If too thick, add a little of the boiling liquid or some more oil.

  6. Add a dollop of The Aussie Smoker’s Honey Mustard BBQ Sauce and wazz until combined.

  7. Place the corn chips with only a thickness of 1 or 2 chips into an oven tray and place into the oven for 2-5mins until warm but not burnt.

  8. Gently warm the salsa in the microwave.

  9. Pour evenly over hot nacho chips.

  10. Pour the Yellow Goo evenly over the top of the salsa and return to the oven for 3-5mins.

  11. Sprinkle with some fresh basil or herbs of your choice.
