Squash Wedges with my Chilli BBQ Glaze


Ingredients:

Method:

  • Preheat oven to 200c

  • Carefully cut the squash in half, lengthways.

  • Remove all the seed with a spoon and discard. Leave the skin on.

  • With the flat side on the chopping board, cut the squash into thick wedges, lengthways.

  • Lay a piece of greaseproof paper onto an oven tray.

  • Oil the squash wedges

  • Sprinkle with The Aussie Smoker Signature BBQ Rub and place onto the greaseproof paper.

  • Place in the oven for 30mins or until tender but not falling apart.

  • In a small pot, add a knob of butter and spoon of Chilli BBQ Jam and melt together.

  • Remove the squash from the oven and turn over.

  • On the side that is now up, spoon or brush over the hot mix on all pieces and return to the oven for 5mins to set the glaze.

  • Season with salt to taste.

  • Garnish with Parsley or Coriander.
